Cilantro Chicken Salad

When I was in high school, my dad decided that we desperately needed to be members of the country club he had worked at in his teens. But during the summer I was always so happy he made that decision because of the pool and the cantina attached to it. They made the most amazing chicken salad and chicken salad sandwiches. Ever since I have been in search of a chicken salad that measured up in taste and it’s been a hard feat. It’s been especially difficult here recently when I’m trying to watch what I eat.

Thankfully, the internet is an amazing tool and you can find almost anything on it. Okay, you can find anything on it, let’s be honest, but you probably don’t want to. And again, thanks to that amazing internet, I found an awesome recipe for chicken salad that not only tastes truly amazing, but also is super low in all the major bad areas.

Cilantro Chicken Salad

We dished ours up in hollowed out tomatoes. Extra tasty!


Cilantro Chicken Salad

  • 7 oz cooked chicken breast, shredded or diced
  • 2 tbsp light mayonnaise
  • 1 small scallion, chopped
  • 2 tsp lime juice
  • 2 tbsp chopped cilantro
  • salt and pepper
  • pinch garlic powder
  • pinch of cumin
  • pinch of chile powder
  • fat free chicken broth


  1. Combine chicken, mayonnaise, scallions, lime juice, and cilantro.
  2. Season to taste with salt, pepper, garlic powder, cumin, and chile powder.
  3. Add a little chicken broth if chicken seams too dry, 1 tbsp at a time.

Makes 2 servings.
